Canning 101: Apple and Cassis Jelly, Sunday July 31st, 1-3 pm

The apples growing throughout our local yards, parks, and roadsides are just starting to ripen! Did you know that these fruits are rich in pectin, and even the most sour apples can be turned into a beautiful and tasty jelly? In this workshop, we’ll combine barely-ripe apples with sugar and a bit of creme de cassis liqueur, to make delicious, natural jelly, preserved in glass jars for future enjoyment. We’ll also cover the basics of modern hot-water bath canning techniques, equipment, safety issues, and resources for the home canner. Each participant will take home a small jar of jelly and the recipe.

Herbalism: Infused Oils and Salves, Sunday August 7, 1-3 pm at Oaklands Community Center

The second in our series of herbalism workshops! This workshop will build on the knowledge and techniques acquired in Leah’s May 29th Tinctures and Infusions workshop, but is still appropriate for folks who missed out last time.

Infusing herbs in oil to capture their medicinal properties, then making them into salves for external use is one of the building blocks of herbal medicine, as well as being a fascinating process to take part in. We will be busting out some kitchen alchemy as we create our own tailor made herbal remedies, and learn about the harvest and use of many common backyard and wild plants.

All participants will leave with a salve they create and a lot of inspirational and practical knowledge.

Winter Gardening: Sat July 23rd, 12-2 pm

This workshop will focus on planning your garden to harvest veggies throughout the fall and winter. Believe it or not, summer is the perfect time to start your winter garden. Come and learn about choosing crops, timing for direct seeding and transplanting, simple cold frame construction, and ongoing care for your winter garden.
